Barako coffee is a variety of Coffea liberica grown in the Philippines and has a distinctive aroma. In Filipino, barako literally means "stallion" and is associated with images of a strong and masculine figure. This coffee is usually dark roasted and served black.
The barako tree can grow up to nine meters tall and has therefore become unprofitable. It accounts for only 2% of total Philippine coffee production and is not exported. Due to its increasing rarity, it has been included on Slow Food's "Ark of Taste" list.
Malabog Cocoa Theo & Philo works with cacao from Barangay Malabog, a community of about 11,000 inhabitants that is part of Davao City , the largest city in the Philippines by area. Everything in Davao City is flat and very green, stretching across hilly landscapes.
Malabog is home to many small-scale cocoa farmers. The conditions for cocoa cultivation are perfect. In 2019, for example, Nong Joe won the award for the best cocoa beans in the world at the International Cocoa Awards (ICA) , out of 226 entries from 55 countries.
Philo Chua sources its cocoa from a group of farmers in cooperation with the organization Gawad Kalinga . Gawad Kalinga helps people escape poverty. (Barangay is the smallest political administrative unit in the Philippines.)
