Cocoa from Dennis Bodie: The cocoa used by Pure Chocolate is supplied by Dennis Bodie, a farmer on a homestead called Tom's Hope, nestled in the John Crow Mountains (in Fellowship, Portland County). Finding Bodie's farm requires the help of locals.
There are no street names, no house numbers, and the courtyard is not signposted either.
Dennis Bodie owns the farm. It is his pride and joy; he has dedicated himself body and soul to his farm, never takes a vacation, but, as he says, enjoys the sound of the stream and the nature around him every day.
His cocoa is a cross between Criollo and Trinitario, which is fermented and dried by hand.
In chocolate production, what happens during and after the harvest is crucial. The special process ensures that the exceptional cocoa flavor of the original cocoa beans is preserved as much as possible.
Flavor notes: citrus fruits, red berries, spices
Ingredients: Cocoa mass, cane sugar, cocoa butter, lemongrass
