Bronze at the Academy of Chocolate. A Jamaican proverb says, "We likkle but we tallawah" (we may be small, but we are brave). And that's what this bar with Jamaican cinnamon embodies.

Description:

We likkle, but we tallawah

This bar is infused with warm, locally grown cinnamon, freshly harvested from the bark of the cinnamon tree. "We likkle but we tallawah" (we may be small, but we are brave) is a Jamaican proverb adopted by Pure Chocolate, and it seems to be embodied in this bar. And that's why it won bronze at the Academy of Chocolate.

Cocoa from Dennis Bodie : The cocoa used by Pure Chocolate is supplied by Dennis Bodie, a farmer at a homestead called Tom's Hope, nestled in the John Crow Mountains (in Fellowship, Portland County). Finding Bodie's farm requires the help of locals. There are no street names, no house numbers, and the farm isn't signposted. Dennis Bodie owns the farm. It's his pride and joy; he's dedicated himself wholeheartedly to it, never takes a vacation, and, as he says, enjoys the sound of the stream and the surrounding nature every single day.

His cacao is a cross between Criollo and Trinitario beans, fermented and dried by hand. In chocolate making, what happens during and after harvesting is crucial. This special process preserves the exceptional flavor of the original cacao beans to the greatest extent possible.

Flavor notes : cinnamon, red currants, caramel
