High-percentage chocolate made from white Criollo cocoa beans. Caramel, nutty and fruity – an exquisite delicacy from Tabasco, Mexico.
Description:
“Almendra Blanca” translates to “white almond”, because the white color of this bean gives the finished bar a lighter appearance despite its high cocoa content.
This special cacao comes from the 30-hectare plantation used by Agrofloresta for training courses for indigenous smallholder farmers participating in the Selva Tabasqueño project. In 2014, Hugo Francisco Chavez and his friends founded Agrofloresta Mesoamericana to transform a degraded forest into a diverse cacao forest. This demonstration farm illustrates organic cacao cultivation within an agroforestry system using local timber tree species.
Only ten local varieties are cultivated on the farm, the result of decades of selecting native cacao trees. They represent some of the finest Criollo Tabasqueño cacao varieties, known under the name Almendra Blanca.
Most of these cocoa varieties have white cocoa beans. However, since some Criollo-Tabasqueño cocoas with purple beans have also shown excellent flavor characteristics, the farm does not only protect white-bean cocoas.
Availability is limited to quantities of approximately 1 tonne per year. Of the 2021 harvest, only about 400 kg went to Europe.
Ingredients: Cocoa beans, raw cane sugar, cocoa butter. Flavoring: Caramel, nuts and tropical fruits.
