This bar is not to be missed! Rum from the Dominican Republic with cocoa from Finca Elvesia, a unique botanical garden with cocoa varieties dating back to the 17th century. The organic cocoa for this bar comes from Finca Elvesia.
(El Valle, Hato Mayor Province).
This farm lies nestled among rolling hills, far from tropical beaches and popular resorts. Located in the agricultural community of El Valle, the farm covers more than 150 hectares of productive land. Finca Elvesia is a botanical garden showcasing all kinds of cacao varieties, which originated primarily in Venezuela in the mid-17th century. Stepping here feels like entering another universe—a peaceful cosmos of cacao trees from which red, orange, yellow, and green pods of all shapes and sizes sprout.
It is no coincidence that Finca Elvesia is considered one of the special farms in the Dominican Republic.
The farm has changed hands several times over the years. Today it belongs to Ramon Lopez. Ramon grew up in El Cibao, the heart of the Dominican cocoa sector. He is supported by Isidro Castillo and employs around 35 people.
The Dominican rum in this bar is from Brugal. Definite soaks the cacao nibs in rum for a month. Then they are dried and ground with the sugar.
Tasting notes: The sweet, warming rum flavor blends well with the fruity notes and pleasant bitterness of the chocolate.
Ingredients: Cocoa mass, cane sugar, rum (<1%)
